Supper this evening: Paprika Chicken:

Image

Three large onions sliced in thin rings, with some chopped garlic.
Fry in casserole until soft (I sweat them fatlessly, because of my diet).
Add one tablespoon of paprika.
Fry for another minute.
Add three large chicken breasts, cut in chunks (browned first if you like),
one large jar of pickled grilled red peppers, drained and cut into strips,
one tin of chopped tomatoes.

Bring to boil; heat in oven at 180/350 until chicken is cooked, better at least 45 minutes, longer is good.
(4-6 helpings)

Served above with wholemeal basmati rice and locally grown purple sprouting broccoli.

It was. (Actually second time out - I made it for dinner on Saturday, and tonight, when my wife was away, she had a box of it to microwave, and I had the rest at home.)

@Tines: That looks so good I might try it myself soon. Good choice of butter, by the way. Look forward to seeing more of your cooking!

@pwhodges: I should really eat more balanced, healthy meals like that. And thanks for posting the recipe, I was thinking of starting to do that too. Would any of you guys be interested in that? I also happen to have a few photographed step-by-step recipes.

I seem to be on a bit of a roll at the moment. Here's what I made for breakfast this morning

Image
Brioche bread and butter pudding. Take one brioche loaf, butter, marmalade in the middle; custard made from a pint of milk, half a pint of cream and three eggs, flavoured with a generous teaspoon of vanilla essence and a good dusting of nutmeg

Image

soak for half an hour, top with demarera sugar and more nutmeg, bake at 160C for about an hour

Image

And for supper, a summer salad

Image
Mozarella, avocado, tomato salad with a vinaigrette, and some panini

You and Ornette should have some kind of a cook off, see who can make the dish that looks the tastiest.

I would post a picture of me eating a massive bowl of rice, but I think the sight of it would scare people. I can be a bit of a glutton.

Fuck yes. B&B pudding is one of the best things. I usually make a more traditional variant with sultanas and no marmalade, but to be honest your version seems better. I'll give it a shot!

Catamari wrote:You and Ornette should have some kind of a cook off, see who can make the dish that looks the tastiest.

What about me (and pwhodges too!)? Are you saying my food looks bad? ;)

Maybe this one will change your mind!

Steak with salsa and sour cream, cornbread on the side  SPOILER: Show

Start by making the salsa. Cut Xs into some tomatoes, and let them sit in a covered container with some hot water for a couple of minutes, then remove. Other than that you'll need cucumbers, red onion, some coriander and some parsley.
Image

Peel the tomatoes (the soaking will help them peel very easily), and chop all of the above ingredients finely. Add your choice of heat; I used fresh jalapeno, but you can substitute any fresh chili, or even a sprinkle of cayenne. Season with salt, lime (or lemon) juice, and some pureed/canned and chopped chipotle if you have it. Mix.
Image

Next off is the cornbread. Dead simple. Melt butter in cast iron skillet. Make batter out of cornbread, eggs and milk, with a small bit of sugar. Pour mixture into hot skillet. Stick in the oven for 15 minutes on high. I added some chopped pickled jalapenos to this one.
Image

Sear up a nice sirloin steak, cook to your preferred doneness.
Image

Serve the steak with the salsa and a dollop of sour cream on top, along with the cornbread. I actually used buffalo milk yogurt rather than sour cream here. It's very similar, but less fatty. A good alternative if you can find it.
Image

This steak was quite rare.

I need to get back to doing this sort of stuff more often.[/spoiler]

There's also a recipe that my wife has done that uses croissants and chocolate; but honestly it's just too rich*, and so I prefer sultanas or marmalade (either's good) - and the key thing, to my mind, is to get the amount of liquid just right so that the inside is nice and soggy but you get a crisply toasted top as well.

Mmm - perhaps it's time to make one!

* I should perhaps explain that I have needed to reduce the amount I eat, and the richness of it, partly because of my metabolism slowing with age, and partly in response to a heart attack** a few years ago. So my cooking either has to be healthy, or in the case of dishes that don't meet the rules, infrequent.

** No, I was not over-weight, nor particularly at risk by any of the usual indicators - as my doctor said to me afterwards: "all I can say is... bad luck!"

A professional!
Looks like we have a serious contender, guys! Those vanilla-pudding raspberry biscuit-cakes look jolly good. :D
You are most welcome here, sprintstyle.

Baking isn't my strong suit, but I do make cookies and pies on occasion. I should probably practice more on cakes and such. Here's a pie I made for pi day a couple of years ago.
SPOILER: Show
Image

I've gotten rid of that old baking tray since.
The pie had a chicken-mushroom-bacon-mirepoix filling, and it was damned good.

Edit: @Cat: Mmmmm... maggots.
