Whatever I was told to do with it, I'd guess. I know this probably sounds unnecessarily Shinji-like, but think about it. I've been given control of a massive creature for no other reason than "you're the only one who can pilot it." Who am I to determine how the Eva should be used? I didn't train for this. I'm no one special. If the suits think that I should pilot an Eva, then they probably know my skills better than I do, they know the reasons better than I do, and their judgment would be significantly better than mine. Let them decide how such things should be handled.

Most probably, I'd use it to threaten the world into submission and then do whatever I wanted. I'd need a power supply of some sort, though.
A good idea would be to experiment doing crazy stuff with AT Fields, like flying and all (don't you just love being able to catch a missile in your hand?)
