Speculation preferably is prompted by something and ultimately serves to address an issue or serve a purpose.

The absence of cartiliginous noses and ears on Evas should be simply read as them, well, just not having them. There is no evidence suggesting otherwise, and it is fully consistent with their lack of distinctly mammalian features. Hence, spinning an elaborate web about these structure having originally been there, being surgically removed for no apparent reason, and four nares fabricated off-site from where that fleshy nose should have been -- well, it's pointless.

What the hell kind of surgeons do they have in the future anyway? A clitoropexy or clitoral reduction/recession would have easily solved this problem.

Just what sort of classes are you taking?

maybe they surgically removed it so that it looked less human, and nobody would suspect a thing

because if i were to make a robot, i wouldnt give it a nose, its just pointless
so for Nerv to get everybody to believe that they were "ROBOTS", they had to think realisticly and take away their noses

It is not unusual at all for robot/mecha designs to incorporate the faux-nose. Some even include a "perfect sculpt" of a human face, even if the rest of the body is very mechanical-looking. This is such an established convention that the masses (and nerds like Kensuke) wouldn't think twice about it, and the Evas' humanoid builds would have made human-like "faces" all the more "appropriate".

On the subject of disguishing the Evas as robots: Incidentally, Nerv didn't go to the trouble of covering the Evas' arms and hands with anything but this thin, stretchy, plasticy stuff -- so you can see everything from the muscles down to the fingernails if you look closely enough. I guess they were hoping that nobody would.

Simply put, the Evas prob-ably have these minimalistic faces with four little nostrils for the same reason that they have three auxilliary pupils: because although they are "human", they are fundamentally not the same kind of human as us.
