After getting all the Eva soundtracks I noticed that some songs where ones i'd never heard in the anime such as "Yokan". Also I noticed that they didn't include the Asuka mind fudge or Eva version of Ode to joy [one of the best songs in the series]. Why is that?

Handel's "Messiah - Hallelujah chorus" (Asuka's mind rape melody) is available in some classical music collections. Just type the song title in Amazon and you'll find it. As is Beethoven's 9th Symphony "Choral" (Kaworu's battle tune). Segments from the 4th movement of Beethoven's 60-70 minute long symphony were used for that scene due to Fredrich Schiller's poem "Ode to Joy"; which Beethoven had used for the lyrics in the final movement.

I believe you're thinking of "Jikai Yokoku".

Right, the exact same version used in Episode 24.
