Apart from Eva I really like Madoka Magica, Revolutionary Girl Utena, Serial Experiments Lain, Legend of the Galactic Heroes and Rose of Versailles.

I love Sailor Moon and Cardcaptor Sakura. I do like Madoka Magica, Wedding Peach, Cutie Honey 73, Cutie Honey Flash, Full Moon O Sagashite, The Rose of Versailles, and Kamichama Karin. I love the Full Metal Panic series especially Fumoffu and I enjoyed watching Mobile Fighter G Gundam and Mobile Suit Gundam Wing.

[The Killer of Heroes]

I'm pleasantly surprised by the Rose of Versailles love here. I watched it for the first time a few weeks ago and was really impressed with how good its general pacing was for a 70's anime.

I’m totally digging a lot of the ones seemingly coming to an end or currently in their prime, like; attack on titan, my hero academia, and demon slayer, but as for favorites other than Evangelion, I’m still in love with Madoka Magica, Relife, Punch Line (guilty pleasure, sorry), and Captain Earth, and find myself rewatching these gems rather than starting a new anime.

I don't know the first thing about air combat but that scene is burned into my mind (as is most of the three Patlabor movies) for appearing realistic and being tense as all hell. The climbing action as all the radio chatter keeps going and pilots asking where the hell is it and do they even have permission to fire and chef's kiss.

Aside from Eva (obviously) I could list a few.
Little Witch Academia is just peak comfy. Every single character is fun and unique, the animation is top shelf with a really good and original artstyle. Also the overal theme of the show (basically "believe in yourself and do your best, even if you don't have inherent talent") manages to come through without being overly corny or ham fisted.
Puella Magi Madoka Magica is an absolute masterpiece of a series, and arguably does the whole "weird ambiguous symbolism" better than Eva in some places. It's also at times absolutely existentially terrifying, and the ending to the TV series is one of the few things that can actually make me cry. I really hope the final movie is good; it's been a long time coming and after how utterly miserable the ending to Rebellion was (not bad, I hasten to add, but incredibly depressing) the series needs a conclusion that makes me weep for the right reason.
Gunbuster, speaking of endings that make me cry, is an absolutely stellar directorial debut by Mr. Anno, and perfectly balances goofy/fun and serious/heavy story elements. Also Noriko a qt.
Tetsujin 28 from 2004 might be one of the best Imagawa-directed things I've ever watched, and I positively adore Imagawa's stuff so that's saying a lot. It builds tension absolutely perfectly, with every episode being heavier than the last and culminating in an utter gut-punch of a finale. Also superbly directed and animated, and manages to make Tetsujin himself- a big tubby metal bean with arms and legs- absolutely monstrous.

I got around to watching this a year or two ago and really liked it. I do feel theme of the show is more nuanced than just working hard even if you don't have talent since (Mega spoilers) the big reveal of the series is that Akko did actually have some "talent" but it was inadvertently sapped away by Shiny Charitot, the very idol that Akko looked up to and was so mesmerized by.

I feel like that's suggesting something more bittersweet about creativity and the nature of influence etc., but its difficult for me to find the right way to express just what exactly that might be. I found it to be a pretty devastating reveal, anyways.

Oh for sure; the Big Reveal was a real sucker punch and added a lot of thematic depth to the story. Honestly though, whilst the whole series was great, I kinda prefered the first half being more silly/light-hearted and episodic. But then I am a sucker for entertaining fluff.
