I do love her visual aesthetic in the third movie, even if most of it goes towards not liking Shinji. She looks very sleek.

It's not Shinji she doesn't like; it's what life has become, supposedly as a consequence of what he did at some stage. His reappearance reminds her of that.

Sleek. Yes. That is the word I have been seeking. Her new hairstyle costume definitely give her a very restrained air, compared to the openness of her older character design. I find it visually interesting that Misato always had Gendo's color scheme, but reversed. In the new design her jacket and hat have grown as her military facade overwhelms her, but she has a warm fuzzy motherly sweater on underneath.
