What is Evangelion about to you, in a single word?
For me, personally: Evangelion is about depression.

For me, Evangelion is about acceptance.

This garden universe vibrates complete.

Even with all the sci-fi, mecha, religious, metaphysical, psychological, philosophy stuff, in the end it's really just about life... and how pointless it is. The eternal question of purpose by man which has no definitive answer.* That's why we have to find/make/create our own purpose for existence. And that's where everything else 'life' builds on.
*For those who don't believe in God or religion of course. Religious people already have everything thought and planned out for them.

Specifically, the conflict between humanity's desire for perfection and the inherent imperfection of reality. Be it the control systems of the Evangelions, the mental conditions of the pilots, the automated defense systems of Tokyo-3, or even the very nature of the human soul, the world of NGE is overflowing with flaws, shortcomings, and a general incompleteness. Simultaneously, the ultimate goal of Seele is to drive the evolution of humanity out of its stagnate, flawed state to godhood (that is, perfection).
