I'd recommend watching a few of the classic series and then watching the new series, starting in 2005. Basically the entire Eccleston-Tennant period exists in the same continuity, so you get a lot more out of it by starting then.
My first episode was The Tomb of the Cybermen during the Troughton era. It's a good introduction to how the show started (and Matt Smith has been deliberately drawing from Troughton's Doctor as well). Then find a Pertwee episode and a Baker episode. That's enough to get you through the core of "classic" Who that the current writers are drawing from.
Then (unless you're really taken with it), start in 2005.
Oh, and Tom Baker's autobiography is just a really fun read if you like his personality on the show.
