The only ones I can identify are Asuka, C2, Cutey Honey (Re: version), Ranka, Rei, Eureka, Ruri, Lucy, Haruhi and Yuki from that one popular anime that has the internet surfing cricket, Kotona from an anime about a star being made of luck, that vocaloid Miku that did that remix of Aquarion's theme and GaoGaiGar if I remember correctly, that sailor scout, and Nanotrash.

That book is sold in many major bookstores so it is not just an Akihabara novelty -- using moe for educational purpose is a trend in Japan. I read this book in bookstore and actually found it quite informative and the moe girl does help me remember the elements :)

It's still mecha, and last time I checked mecha was included in the genres that are in Evangelion.

Unless the part where a young mentally unstable boy pilots a 100+ metre tall armoured killing machine who happens to also be his mother completely slipped your mind.
