The no aging thing I think was done because keeping Mari and Asuka (especially Asuka) the same age was the safe option. The time skip was a big risk, but Shinji interacting with a 28 year old (who looks it) Asuka...ehh that could go over very poorly and come across as creepy.

Pretty much everything about Mari is unexplained and open for speculation.

Why does everyone assume that Final is going to continue this darkness? 3.0 could very well be the darkness before dawn, Shinji's lowest point that he manages to pull himself (or is helped out of) out of at the end.
