Well, yes eva does stop glowing and Rei's appearance might mean something, but the whole point was that eva will exist forever, and the whole scene might be proposing an idea that it will last beyond life/death.

Those musics don't seem to attract that many Americans who spend their money in movies. Sure, the clssics will work but any songs with Japanese lyrics would be not so marketable, unless it's techno-ish where language doesn't matter.
