I received courtesy of eBay the PS1 classic Ace Combat 3: Electrosphere.
I had never played it before and attempts to find the second game which I also never played are proving fruitless on both Amazon and eBay. I passed the first mission with flying colors. Then crashed and burned on the second mission due to how close to the ground I got to get to take out the targets. It's going to take a while to get the hang of the controls but I am sure I will.

I'm sure you'll get the hang of it soon enough, each of their games is just a little different in how the planes handle, so there's always a learning curve.
