They also have zero appreciation for Go Nagai anime and rate mecha series either too low or too high.

I don´t even go to MAL for the ratings anymore to filter out good/bad shows.

Can anyone reccommend me an anime to view? I've had trouble finding anything to keep me hooked lately.

Deciding factors, in order: Characters, plot, art style, dub over sub preferred.

Fan anime out of what I've seen:
Paranoia Agent (and at that note, anything Satoshi Kon did)
RAINBOW
Lain
Haibane Renmei
Texhnolyze (in the process of watching)
Evangelion (of course)
Boogiepop Phantom
Ghost Hound (need to finish)
Death Note
Hell Girl
Higurashi (I watched the first arc, then read the rest of the arcs focus on mostly the 1 girl and didnt care to invest time into it)
Witch Hunter Robin
Fullmetal Alchemist (Dont care for Brotherhood)
Digimon (any) [Ive already seen some of Sailor Moon, Pokemon, Cowboy Bebop and DBZ back in the day]
EDIT: Add Solty Rei and Wolf's Rain <3

I also started Elfen Lied but it wasn't holding my interest, either...

I have contemplated watching Ergo Proxy (the main char looks so emo...), Hellsing (many reasons to watch, but I hate vamps), and Monster (was waiting for the full english dub release). I was wanting some opinions about them, though...

I did see someone reccommend Mouryou no Hako, so I'll definetly check that out.

If you can get over lack of dub I'd say K-ON would be ideal choice

@SpearofLonginus: I just submitted a review for Ergo Proxy today, actually, so hopefully that can give you some idea as to whether it looks like it's worth checking out.

Since you haven't listed these, I recommend looking into Wolf's Rain, Ghost in the Shell: Stand Alone Complex, and Kino's Journey. WR is a little slow and it took a few episodes for me to even care about any of the characters, but overall it was alright. GitS:SAC is awesome cyberpunk detective work and action for pretty much every episode. KJ is an episodic series about a girl and her sentient motorcycle, basically, and is much in the slow-paced, calm, but oftentimes eerie or poignant vein as Mushi-shi, Haibane Renmei, and to lesser extent, Boogiepop Phantom.

How was Hell Girl, anyway? I've been meaning to check that out for some time, but it keeps slipping off my list.

That is a very tall order. Only ones I've got are RahXephon and Fafner in The Azure. You might like Gundam 0080 or one of the old Macross series/ovas since they've got plenty of jibber jabber.

As I said, I don't really care for the manga of FMA so I might check out Brotherhood if I happen to come across it, otherwise not really worth my time.

I've heard of Eureka Seven and K-On!... both looked really childish/slice of life/harem like. I Wiki-d ES and it looks action centered which Im really not a fan of. Is K-On really worth checking out?

@Merridian:
I checked out your review and it seems its at least worth a shot, especially since its streaming over at ANN. I think the main reason aside the main char that I turned it down in the first place was I wanted the limited sets but couldn't afford them. :(
Oh, I saw most of Wolf's Rain and loved it. I heard people hated the ending but when I had it spoiled it actually sounded cool to me. The reason I put the series down was because FYE gave me a scratched disc. When I tried to return it they said I made the mark and wouldnt refund me. I got to the recap episode.
I really should watch Stand Alone Complex. I liked the movie for GitS.
Kino's Journey sounds kinda meh X.x I don't care for sentient bikes, but I'll give ep 1 a try.

Hell Girl I passed on originally for the same reason as Ergo... looked like a goth kid japanophiles dream... but it really was alright when my gf made me watch it. I've only seen the first season, btw. It's very episodic (think Digimon, Pokemon, Sailor Moon, without the kiddy stuff... person needs revenge, person calls hell girl, hell girl kicks ass, someone goes to Hell) but there is a little sub plot here and there that keeps you intrigued to the end.

@Twin Drive, what can you tell me about Raxephon? (sry on sp)

It's awesome, but it's not for everyone. It's basically the old Raideen series gone Evangelion style. Hell, except for Falsetto EVERY major dollem is based on an angel. It's got some good music, action scenes, art style, and plot to an extent; character development, pacing and the other music is........ Well, it's a serious turn off. Not only that, but the relationships people have with each other can be very confusing at times, so much so that I needed to see the compilation movie to get a lot of it. The final battle between BellXephon and QuonXephon is worth it.
