Well, dubs vs. subs isn't really a matter of growing up...
It's all a matter of ones standards on how something like Japanimation or something.
The thing is about dubs...
They have bad translations, while subs, have the best interpreted translation.
in defense of dubs, they don't generally have "bad translations" (unless, of course, a company like 4kids is manning it, and then it becomes a case of "dumbing it down for the children" or blotting out touchy subjects such as haruka and michiru's lesbianism in sailor moon).
it's more a matter of getting the same meaning across AND fitting the characters' mouth movements. sometimes it works, but in other cases, the dub producers are forced to compensate somehow. i do believe that most major companies - bandai, adv, pioneer/geneon, whatever - have every intention of giving the customer a satisfactory product. if not, what's prompting customers to continue supporting the release of a series?
subs aren't completely innocent either. the editors must take accuracy AND readability into account. you don't want to have a line that is so long-winded and brief in appearance that the viewer doesn't have a chance to read it fully before it pops off. sadly, more than a few region 1 releases are guilty of this. and some releases include subtitles copied ad verbatim from the dub script.
evangelion, in my opinion, has a rather good english dub (barring spike spencer's idiotic overacting). and at least it doesn't have brad swaile, bandai's weapon of choice for when they need someone to do a whiny and over-emotional teenager.

Well, I knew that they needed to keep the stuff down for the kids, but if it was originally a little on the PG13-R side, why show it to kids who watch TV all day?
It could boost up their ratings a bit though...
Pioneer did a good job with their dub dialogue in Tenchi Universe.
When I turned the dubs on, they matched the subtitles.
But it's all dependant on the company I guess.

"Dubtitling" is the practice of subtitling using the dub script, rather than translating what is said. The Disneyfied version of Laputa is a particularly foul example, with subtitles shown when there is no speech on the soundtrack.

How do you think treasures such as the Platinum series DVDs came about? Certainly not from the funding obtained from people illegally downloading the series, I assure you.
