If it has a sewn spine you can just pop it on the scanner without really worrying. If it has a glued spine you have the problem of it being less flexible than a sewn one which means, assuming you want to scan the entire width of the page, that you have to apply pressure to get the same results, but then! there's the added problem that pressing down on it like that damages the book.
I'd say just do your best without damaging the book. I don't think folks are going to complain about dark and blurry bits towards the gutter when they know you want to preserve and enjoy your book yourself!
