The movie is going to have various types of monsters.
Del Toro said they had a "Survivor-esque" voting system were they whittled their multitude of Kaiju designs down to the final ones that will appear in the film. I can't find the direct quote but Del Toro said the final film is going to feature like a dozen different Kaiju. Some are just shown in archaic documentary footage while others have full on battles with the Jaegers.
Del Toro is first & foremost a Monster fan. As long as the final film doesn't drastically stray from the script each Kaiju is going to be an entirely unique beast. Hopefully they'll keep a lot of the Kaiju designs under wraps until the film comes out. Might have to avoid ALL marketing from now on.

In the newest trailer, one of the Jaegers gets its left arm blown off, and the pilot emerges with... extreme damage to his left arm and the plugsuit material around it. Later, the robot uses a large ship as a weapon.
Not like Eva at all.
EDIT: By the way, if you tried to actually use a ship as a club like that, it would work approximately as well as using a six-foot-long submarine sandwich in the same manner.
