They actually sell those in Japan, so that they can fit in refrigerators more easily. They come at around $80 a melon, if I recall correctly (prices may have fluctuated over time).

I believe the primary reason is to save on transport, round watermelons waste a lot of space, you can fit a lot more of those square ones in a truck.
