They don't have the ability to awaken the Evas at will. Eva-01 only ever moves on her own to protect Shinji, which is obviously a calculated outcome on Gendo's part.
I assume their consciousness is more or less dormant whenever they aren't going berserk.

I'd give Eva-01 a hunchback and a massive underbite. Eva-00's armor would have an urban camouflage pattern and she would wield a club to beat her enemies to death with. Eva-02 would look pretty much the same except she'd be wearing a wrestling mask.
