The satellite view of the land we're getting is actually rather close, with small islands clearly visible. We couldn't identify where this might be (somewhere in Korea, maybe, possibly?) but in any case Joseki did some maths and the core-ified land we're seeing can't be from anywhere past east Asia. I'm probably mispresenting the findings somewhat (and require immediate correction by the others), but they WERE eye-opening...

How much land is visible is not equal to “How much land was ruined.” Granted, nothing outside of that visible land is falsifiable, but it’s still an important distinction to make.

It should be coastside east China/Korea/Japan depending on the orbit profile (unclear because of lack of reference points).
Only thing sure is that they flew over 4.000+ km of Earth at the very least, so I'm fairly sure we can say that is not something limited to NERV's proximity.

I honestly can't tell if you're warning me against highballing or lowballing things.
I've suspected that the extent of the coreification is not anywhere near global since at the end of 3.0 we can see the Wunder approach a perimeter of white crosses. (Center of the contaminated zone has regularly spaced red crosses. White = purity.) The shot in question conveniently does not let us see the land below. Operation US also throws up tons of cloud cover to make it as difficult as possible to tell what the state of the world is and how much of it is effected. In other worlds, there's intentional obfuscation happening here. I expect it's part of that "put audiences in Shinji's mindset" thing, where he's been led to believe that everything is terrible and requires magic to fix; whereas in reality, most of the world is still in a post-2I state.
(That moon, though... Yikes.)

It's not just the planet looking different, it's also everyone on the planet acting different too. Sure, a lot of that helps telegraph Shinji's feelings of isolation and confusion to the audience, but it's also a stretch to think that anything worked like it did before. Nerv relationship to the UN was central to the world-building of the first two films, and everyone who used to be a part of Nerv now fighting Nerv kinda makes it seem that this relationship isn't likely anymore.
Also, yeah. The planet having a mouth and a gigantic eye makes me wonder if anything outside of the known (to Shinji) world is easily inhabitable. Like, what's the UN have if they're still located in NYC, a Mt. Everest-sized tail leading down to a butthole? Probably not, but I can't imagine it being much more pleasant than the part of the planet with a face growing on it either.

The mouth exists on a very local scale. The Moon is something that effects the entire planet even from its NORMAL orbit. After Third Impact, its orbit is so close to Earth that it's pulling atmosphere away. If nothing else, that's going to screw with the amount of usable land world-wide, far beyond whatever the radius of the core-ified zone is, because the difference between high tide and low tide is going to be heightened significantly, and catastrophic tidal phenomena are going to go way up. That's the point I was making there.

The scale that the eye and mouth are on is very, very local, so I'm going to go with "probably not" here.

^It's hard to tell if it's just a side-effect of the moon having a closer orbit, but it's no longer tidally locked with the Earth and is not only visibly rotating, but it can also be observed moving across the horizon. At that speed it's bound to complete at least a couple revolutions a day.
Someday I hope that we'll be reunited if that is what's destined to be. Perhaps we'll discover that elusive bible. And then we will finally be free!
