Mozzarella is a good cheese to melt, as it tends to uniformly cover whatever it's melted on. However, muenster cheese is the cheese that tastes best when melted. Sharp cheddar tastes really good when eaten on its own, while pepper jack tastes good with just about anything, as long as you don't eat it by itself. However, all cheeses have their place, and can be delicious when prepared properly.
